Date and Almond Protein Energy Bites
Ingredients

Energy Bites, energy balls, protein balls, bliss balls, power balls or snack balls . . . whatever you want to call them, these little nuggets are perfect for snacking! These all-natural Date and Almond Protein Energy Bites make a healthy snack, and are sweetened with dates instead of a typical protein bar that is usually packed with added sugar.

10 Medjool Dates, (pitted, chopped) 
1 Cup Soaked and Dehydrated Almonds
1/2 Cup Unsweetened Flaked Coconut 
1/4 Cup Almond Butter (or any nut butter, peanut butter is a popular favorite)

Dates
Almonds
Almond Butter
Coconut Flakes
Cacoa Powder
Sesame Seeds

Directions

In a food processor pulse almond butter, almonds and coconut flakes until mixed well.  I do not over pulse the almonds because I like to have a little crunch. 
Add dates and pulse again until well blended. This will take a little time to break the dates down so be patient. 

Once blended roll into walnut sized balls and roll them in either coconut flakes, cacao powder or sesamer seeds (I lke to mix it up).
Then set on waxed paper and refrigerate for 30 minutes. Transfer to an airtight container and store in refridgerator or freezer, that is if you don't eat them all first! Emjoy

Optional Toppings

You can add a 1/4 tsp of cinnamon for a tasty twist or roll the balls in cinnamon - Yum!

In addition to the sesame seeds, cacao powder or coconut flakes you could roll the bites in chia seeds or hemp seeds!

These can be made with different nuts if you prefer. Walnuts or hazelnuts will work fine as well.
