Healthy Raw Vegan Mayo - No Oil!
Ingredients

Here's a simple recipe for oil-free raw vegan mayonnaise:

Ingredients:

- 1 cup raw cashews, soaked in water for at least 4 hours
- 1/2 cup water
- 2 tablespoons fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste

Directions

Instructions:

1. Drain and rinse the soaked cashews. Add them to a blender. A small buller blender works best for this.
2. Add 1/4 cup of water, lemon juice, apple cider vinegar, mustard, garlic powder, onion powder, salt, and pepper to the blender.
3. Blend on high speed until the mixture is smooth and creamy. Stop the blender and scrape down the sides as needed.
4. Add more water to desired consistency.
4. Taste and adjust the seasoning as desired.
5. Transfer the mayonnaise to a jar or airtight container and refrigerate for at least 30 minutes before using.

Optional Toppings

To make this recipe an aioli, you can add one clove of minced garlic to the blender along with the other ingredients. The garlic will give the aioli a deliciously pungent flavor and aroma that pairs well with a variety of dishes. Simply blend the garlic in with the rest of the ingredients and adjust the seasoning as needed before transferring the aioli to a jar or airtight container and refrigerating it for at least 30 minutes before using.
